Peach Cobbler Recipe: Wonderful Wife Tip Revisited

I shared this peach cobbler recipe last year on my blog and since peaches have been fantastic this year it’s time to share it with anyone who missed it!

I grew up with my mom making this peach cobbler as a special breakfast treat.  My husband still cannot believe we used to eat this for breakfast, but I think it’s perfect for any time of day.  It’s a super easy recipe that will automatically put you in the wonderful wife category.  We’ve always favored peaches as our fruit of choice, but it is delicious with apples as well!

First you’ll mix in a casserole or gratin dish:

1 ½ – 2 cups fruit½ cup sugar¼ cup water and ½ teaspoon vanilla and top with cinnamon.

Then, microwave it for about 1 minute until it is warmed up a bit.  (You can also do this in a pan on the stove if you prefer not to use a microwave and just heat for a few minutes on medium until warm.)

Grease a glass pie dish and put the fruit in the dish while you prepare the topping.

To make the topping mix in a medium mixing bowl:

1 egg, ½ cup sugar, 1 tablespoon of shortening (I think melted butter is best, but I have used safflower oil and sunflower oil, too), 1 tablespoon milk, ½ cup flour, ½ tablespoon baking powder and ¼ teaspoon salt and stir with a fork until combined.

Pour the topping over the fruit and bake for 25-30 minutes in a 350 degree oven until lightly browned on top.  Allow to cool for a little while before serving, but it’s delicious warm or cold!  Be prepared for praise.  Enjoy…and have it for breakfast.  Live a little!  It’s my favorite way to eat a peach!

Sweet Clover Market in Essex, VT is the source for my new addiction and hence today’s favorite thing.  Bequet Gourmet Caramel is oh-so-good.  Sweet Clover has a nice display on the counter filled with these babies and I simply cannot resist once I reach the register.  It is hands down the best caramel I’ve ever tasted.  They are soft, sweet and soul satisfying.  So give them a try and you can blame me for your next cavity.

Cupcakes came onto the wedding scene several years ago and I’ve heard suggestions that they have “had their day”, but I personally cannot imagine cupcakes ever going out of style.  My Little Cupcake specializes in “yummy little cupcakes for every occasion” and they have been a guilty pleasure of mine for a while now.  These bite-size treats (or 2 to 3 bite-size if you are more civilized) are made up of a moist, delicious cake and just the right amount of fabulous buttercream frosting and then each is finished with decor to match its flavor.  The other day I tasted pure perfection in their salted caramel cupcake.  I repeat, perfection.  The tasty chocolate cupcake is topped with an amazing caramel buttercream frosting, a caramel drizzle and a pinch of sea salt on top.  When I say it’s perfection I am not exaggerating.

I consider myself a macaroon connoisseur.  I am head over heels for just about anything coconut, but add a little chocolate to it and you’ve got me for sure.  There is a fine balance in the macaroon world of taste, texture and overall goodness.  I don’t want one that’s too sweet.  I also don’t want one that is dry or too crunchy or has an artificial coconut taste.  I have tasted my way through many of the bakeries in the Burlington area and the best macaroons I’ve found are from  Krin’s Bakery.

These Coconut and Honey Macaroons dipped in Dark Chocolate (yep, they even sound delicious!) are divine.  In my opinion they are the perfect blend of sweetness & coconut with just the right amount of chocolate and soft chewy deliciousness.  (Is anyone else surprised that the word deliciousness just got past my spell check?)

I love these cupcakes!  Style Me Pretty posts some of the most unique and beautiful weddings with fabulous details and this one is no exception.  There is something just so darn cute about cupcakes in vintage teacups that I can’t get over it.  If not for a wedding, then I think this would be fabulous for a bridal shower, rehearsal dinner, or your next get-together with friends.  The Mad Hatter would most definitely have these cupcakes at his wedding!  Click on the image below for a link to Style Me Pretty or check out more wedding details here
